But here's the twist: Joe's not one to sweat the score; he's too busy perfecting the art of flame-kissed cuisine. In the world of all-night and early morning smokes, Joe's secret weapon is the LightRanger. What he’ll be cooking during the Big Game: Buffalo Chicken Dip

Ingredients

  • 1 Whole Chicken
  • 8oz Cream Cheese
  • 8oz Shredded Colby Jack Cheese
  • 1/2c Franks Red Hot Buffalo Wings Sauce
  • 1/2c Ranch Dressing

Directions

  1. Smoke the chicken for 1 hr at 425F til the IT reaches 165F. Let rest for 30min before shredding. ( you can sub for a rotisserie chicken )
  2. Place all ingredients into a bowl and mix together.
  3. Put mixture into a 12” cast iron skillet and smoke at 350F for 30min till cheese is melted

Pulled Pork Nachos with Cheese Sauce with  Big Jake Lords

Ingredients:

  • 6-9 lb whole bone-In pork butt
  • Traeger Pork & Poultry Rub (as needed)
  • 2 cups apple cider

Cheese Sauce:

  • 4 tablespoons (1/2 stick) unsalted butter
  • 4 cups milk
  • 1/4 cup flour
  • 1 1/2 cups white cheddar cheese, shredded
  • 1 1/2 cups cheddar cheese, shredded

For Nachos:

  • Tortilla chips (as needed)
  • Black beans, rinsed and drained, warmed (optional)
  • 1 medium tomato, diced (optional)
  • 1 small red onion, diced (optional)
  • 1-2 jalapeños, sliced (optional)
  • Fresh cilantro, as needed (optional)
  • Green onions, chopped (optional)
  • Sour cream, as needed (optional)

Instructions:

  1. Prepare the Pork:

    • Season the whole bone-in pork butt generously with Traeger Pork & Poultry Rub.
    • Preheat your smoker or grill to 225°F (107°C) using applewood pellets for smoke flavor.
    • Smoke the pork butt for about 6-9 hours, or until the internal temperature reaches 200°F (93°C).
    • Remove the pork from the smoker and let it rest for 30 minutes. Then, shred the meat.
  2. Prepare the Cheese Sauce:

    • In a saucepan, melt the unsalted butter over medium heat.
    • Stir in the flour to make a roux and cook for 2-3 minutes.
    • Gradually whisk in the milk and continue cooking until the mixture thickens, about 5 minutes.
    • Reduce heat and stir in the shredded white cheddar and cheddar cheeses until smooth and creamy. Keep warm.
  3. Assemble the Nachos:

    • Arrange tortilla chips on a large serving platter.
    • Spoon the pulled pork evenly over the chips.
    • Drizzle the warm cheese sauce over the pork and chips.
  4. Optional Toppings:

    • Add black beans, diced tomato, diced red onion, sliced jalapeños, fresh cilantro, chopped green onions, and sour cream as desired.
  5. Serve:

    • Serve the pulled pork nachos immediately while they are hot and enjoy!

We were gifted this as an early christmas gift! We live in an area with high winds and many times that will knock out our power. We also have a storm seller which doesn't have great lighting. So when we go down there to work on the water heater or check the furnace it is a game changer! no more carrying flashlights and needing 2 hands so you put it in your mouth. We are so excited to keep using it and finding more places we can use it!!!
